June 19 - Fun Recipes for Summertime Fruits and Veggies: Pick up some fresh fruits and vegetables this weekend and enjoy these fabulous recipes from Elise Compston, RD!

Summer is a great time to experiment cooking with new fruits and vegetables because more produce comes into season. Visiting a farmer’s market can be a great way to get introduced to new foods and fun flavors. Here are two market-fresh recipes to get you started!

Corn & Zucchini Salad

Ingredients:

1 ½ cups corn 3 medium zucchini, sliced into half moons

2 tbsp olive oil 2 tbsp balsamic vinegar

2 tsp red wine vinegar 1/8 tsp dried oregano ¼ tsp garlic powder

1/8 tsp salt 1/8 tsp ground pepper

Directions:

In a small bowl, combine oil, vinegars, herbs and spices. Whisk well and set aside. In a separate bowl, combine corn and chopped zucchini. Pour vinaigrette over vegetable mixture and mix until well incorporated.

Cucumber and Strawberry Salad

Ingredients:

2 cups strawberries, hulled and halved 3 cumbers, sliced into quarters

2 tbsp aged balsamic vinegar 1 tsp pure vanilla extract

1-2 tsp maple syrup 2 tsp lime juice Ground pepper (to taste) 1 tbsp fresh basil, loosely chopped

Directions:

Prepare the strawberries and cucumbers, combine in a bowl and set aside.

In another bowl, combine balsamic vinegar, vanilla extract, maple syrup, lime juice, and ground pepper and whisk until well incorporated. Pour over strawberries and cucumbers and mix well. Top with fresh basil and serve.
