Lauri's Stir Fry Recipe

“I can whip up a stir fry using whatever ingredients I want or have available and my family loves it!”
INGREDIENTS
- 1-2 chicken breasts 1 Red Bell Pepper
- ¼ white onion, chopped 1 head broccoli
- 2-3 carrots, julienned 2 zucchini
- 2 yellow squash 2 cups mushrooms, chopped
- 2 cloves garlic 1 tsp salt
- 1 tsp pepper 1 tsp mustard
- 1 tsp ginger ¼ c soy sauce
- olive oil (for chicken)
INSTRUCTIONS
Cut chicken into strips. Cook chicken and set aside. Add garlic, and onion
and stir for one minute. Add rest of vegetables and cook for 3-4 minutes.
Add chicken to mixture and simmer all ingredients together for another minute.
In a separate bowl, mix together salt, pepper, ginger, mustard, and soy sauce. Pour over chicken and vegetables. Simmer until vegetables are semi-tender. Serve over rice or noodles.
